With hints of raspberries, blueberries and a touch of sweetness, we welcome you to this edition of The Palate. Collaborating with brilliant pastry chef Pierre Roelofs, we prepared a unique dessert to match with an iconic Australian red. Moving our focus to savoury incarnations, we feature a suite of sangiovese wines from Tuscany in the edition four premium tasting. Then, in contemplation of spirit, we muse and ramble on the virtues of Japanese precision. Conversing with Suntory’s global brand ambassador—Mike Miyamoto—and tasting with Julian White of Melbourne’s Whisky & Alement, we take note of malt, peat and the unique cultural expressions within Japanese whisky. Turning back to vinous pursuits, we wonder how many wines hit their straps after 40 years of bottle age? Our historical tasting for this edition focuses on the wines of Jura and the peculiarities of their maturation. Ultimately arriving at our usual destination, we research and develop a shortlist of high quality wines suitable for midweek drinking.¶ Loosen your belt or release your corset: let The Palate do the rest.
